SAVORYmufin
Yes, that’s one f, in mufin. These aren’t cake sweet, paper implanted, only top half good morning waist expander’s… They’re heartier, puffier, almost popover, as that’s the base, with a a little rice flour here, a little technique there, and a serious stuffing from Pecorino Romano, slab bacon & hot sauce, to exploded heirloom tomato with fresh basil leaf, and savory mufin was born.
Seasonally changing, find these little nibblits of awesomeness and stuff ‘em in your mouth like a chipmunk. Might as well bring the soul back into the pop, if know what I mean.
EATme! – Pop ‘em, add hot sauce, feel like a rebel, you’re eating a new food, kids.
Ingredients: Plugra butter, free range eggs, wheat flour, rice flour, ‘oo’ durum flour, chili, sea salt, raw sugar.
V_Bar (Hazelnut, Oat-nibb Crust w/ spicy tamarind currants)

This is one of the most delicious things I have ever made. Yea it’s vegan, yea it don’t got no gluten either. Because you peoples don’t have enough clean, ridiculously sexy foods, aside from fresh veggies… This is to show you I luv you too. No processed crap here. Little top off of fennel seed, black pepper, & course grey salt crunch accents the tart, currant, spicy tamarind center. Stuffed between the perfectly nutty, creamy, chewy, crunchy, doughy robe. This is perfect. This is a freakin cookie.

Plantain Bread-cake w/ Mole Struesel
So I hate muffins. I think they are cake, and since I don’t like sugar, and I don’t like many cakes, this, Mr. Muffin, is my chess peace to battle you… I’ve got nothing but succulent natural goodness here. Somewhat light, hearty, moist mash cake of plantains, bananas and pureed yucca with sourdough breadcrumbs, free range eggs, brown butter and a little of our burnt caramel. The topping, blistered struesel with toasted pumpkin seeds, red chili seed mole, bitter chocolate and pecans is ridiculous depth of a sunkin-in topping. Wich I will admit, with that element of good streusel, a fresh blueberry muffin, I can certainly give props too. This P_cake may be the leading favorite amongst the crew.

Oatmeal Chunky
Simply a baked bowl of 2 types of oats and spelt berries, apple caramel poached apple chunks, red wine baked currants, lots of cinnamon & smashed bananas. C’mon. It’s shaped like a mufin..

Black Gold Bar
Scrap bar from hell. Your going to frown at this when you take a bite, and chew it sooo angrily. The flesh ripe juicy bruleed grape just explodes into your mouth and then you smile. Is that saffron? ooooo coffee, black pepper, what the, salt? Bittersweet chocolate? Brown butter creamy cheesecake style crust from shortbread scraps, and smashed buttercream brownie dips into hot pepper cardamom syrup. Listen people. This was designed with the respect to Sommer Santoro, the genius sweetheart of Black Gold Brooklyn; One of the greatest collaborations of excellent vibe, taxidermy originality precision, and funk jive punk influenced disco jams playing, and nestling inside their record sleeves waiting to be swooped up, and taken away nibbling on this black gold bar of delicious.

Salt & Pepper Sour Milk Biscuits
So I make my own crème fraiche, that’s where the sour milk comes into play here. Salt and freshly cracked black pepper. It;s just a biscuit. A flaky, buttery, salty, mildly tangy, fluffy biscuit. But sometimes I transform these into bacaloa biscuits & they are just stupid delicious… If you know salt cod, you know what I’m talkin bout…

POPovers
For those who know… a good fresh popover is awesome. Crunchy, fluffy, airy, doughy, almost custardy bread. I’ve tried to have a little fun with these, because it’s so enjoyable sitting back and watching your reactions to concoctions like black pepper cinnamon, milk chocolate, percorino, bacon, mustard & bourbon cherry, pecan… Might as well bring the soul back into the pop, know what I mean.
EATme! – Warm me if you can… crack me hot and steamy, eat as is, or slather with some butter, apple butter perhaps? oooooo, in the crevasses of the cinnamon black pepper… nice…
Ingredients: Organic free range eggs, wheat flour, plugra butter, sea salt, cinnamon, raw sugar.
The Scones
Now, I won’t cry and preach and get drunk, or slap my hand on the table trying to prove a point… I won’t… not with these… But I just don’t think scones are supposed to be these stupid little over alkimated cake triangle things with too much sugar… For those who drink really good coffee, espresso, or tea… You’re probably not adding so much sugar and cream you can’t taste the beauty of the product, right?
Same deal… I make these with a biscuit/puff pastry technique… I use really, really good butter, fold everything by hand with classic techniques, and you get a flaky, buttery, almost dry creamy scone that explodes when you get the garnish of bitter chocolate and tangy currant, or rosemary, citrus, olive oil and course grey salt… And yes, I sometimes put coarse sea salt on my scones… I think it’s delicious.

Buttercream Brownies
Double dark chocolate buttercream stuffed brownie bar sandwich… this is sex in a bite. Everything about it is a turn on. The bitter, quality chocolate is a tease. The cocoa is the cow lick… well, for those of you who like that type of thing, and the crackly top, oh like a whisper in your ear, with a gentle nibble. Buttercream stuffed brownie… in a bar form. Bitter sex in a bar form.
EATme! – Just eat me. With a beautiful person next you, and a glass of red wine… trust me.

Plugra butter, cooked slightly under, not too sweet, buttery, luscious. You’ve never had shortbread like this…
